BruschettaThis is a basic recipe that can be altered to taste.
Mix ingredients and let allow to sit for at least 20 minutes.
Brush small slices of bread with olive oil on one side and broil to toast on both sides.
Spoon drained tomatoes onto bread*, top with sliced cheese.
Broil until cheese is melted.
*Leftover liquid can be used for dipping or salad dressing.
